La Tur is a soft-ripened cheese from the Alta Lange region of Italy that is made from a blend of cow's, sheep's and goat's milk.  Each disc of cheese is covered with an amazingly delicate and stretchy geotrichum rind, which gives way to a layer of créme that gives way to a denser creamy texture toward its center.  Slightly pungent.  Delightfully flavorful.
