Langres

Made from pasteurized cow's milk in the Champagne Region of France, Langres is a pleasantly pungent, dense, creamy fudge-like cheese.  With its edible orange wrinkled rind that has been rubbed with annatto (natural coloring) and washed with a brine, Langres is more flavorful than a brie, yet more tame than the infamous Epoisse of France.  Simply put... perfect!
