Pont L'eveque

Produced in France and made from pasteurized cow's milk, Pont L'Eveque is similar to Camembert but the rind is washed before aging in a brine solution.  This creates a cheese with robust and pronounced flavors and an inner paste that is both pudgy and creamy but without elasticity.
